Pasta Carbonara with Bread Crumbs

Yummy! Im eating it now, and im impressed! Must share. This recipe is from a bo0k i recently obtained called "The everything no trans fat co0kbo0k!" Its really nice. The garlicky bread crumbs substitute for the bacon that carbonaras ask for.. so its totally vegetarian friendly. Its super easy and quick and so delicious!

You'll need to grab,

1 tblspn Olive Oil
1 tblspn Butter
4 cloves garlic ( or 1 clove of elephant garlic thats what i used)
3 slices of bread crumbled (it says white but i used mountain grain :)
1 pound Spaghetti pasta ( i used fettuchini or however u spell it)
4 eggies
1 cup heavy cream (whipping cream)
1/3 cup grated parmesan cheese
1/4 white pepper ( i used black whatever)
2 tblspns chopped fresh parsley

What u need to do!

1) Bring a large pot of salted water to a boil, Meanwhile, in a large saucepan heat the olive oil and butter over medium heat. Mince the garlic and add. Co0k and stir until garlic is fragrant (bout 3 mins). Add bread crumbs. Co0k and stir over medium heat for 6-9 mins until bread crumbs are toasted.
Remove crumbs from pan and place on plate. Dont wash the pan yet.

2) Add pasta to boiling water and co0k until al dente according to package. Meanwhile in a medium bowl combine eggs, cream, cheese and pepper and mix well.

3) Drain pasta and place in pan that was used for the breadcrumbs; place over medium heat and add the egg mixture all at once, QUICKLY toss with tongs for 2 mins ( i wasnt quick.. and my eggs scrambled a tiny bit haha but its still so yummy) Add half the breadcrumbs and toss. Place on a serving plate and sprinkle with remaining breadcrumbs and chopped parsley; serve right away.

*I should have used spaghetti, the fettuchini soaked up alot of the sauce so use spag... But even with that, on my first try its DELICIOUS So have fun with it, its simple and fast ! Enjoy!

Herby Forest Mushro0m Soup!

Right then! So this is a YUMMY soup that i kinda threw together without any recipe really, but i'll try to give you an ingredients list and some basic directions here..


1lb button or stuffer mushro0ms.
A package of oyster mushro0ms.
1- 1/2 cups whip cream.
1/2 an onion (or more if u like)
handful of thyme
Splash of olive oil
1 cup of stock ( i used veggie stock)
A pinch or more of, oregano, salt, pepper, and garlic
Step 1 - Get a deep frying pan or wok on the element on medium and splash some olive oil in there. Chop up the onions and stick em in. You want these to caramelize so don't burn them! The onions should turn clear and then a nice caramel color.. this will make the soup kinda sweetish.

Step 2 - While those onions are getting where they need to, get a damp cloth and wipe all that crap off your mushro0ms.. then slice them up.. some people discard the rubbery stalks of the oyster mushro0ms but because this is a soup everything gets blended so keep them in!

Step 3- When the onions are carmelized, add the mushro0ms and the thyme (take the thyme leaves OFF the stalks before) and add whatever spices u like, such as oregano, salt, pepper and some garlic.. (you can put FRESH garlic in but i didnt have any at the time! Boo0o) Saute those all up until the mushro0ms get nice and co0ked and start to shrink a little (about 5 - 8 mins)

Step 4- Add the cup of stock and bring to a boil. Then add the cream.. now this part is really up to you, how creamy or thick do you want your soup? I added about  a cup, cup and a half.. Bring to a boil.. lower heat and let simmer for 5-10 mins.

Step 5- Now blend! You can use a handheld blender or a regular one.. CAUTION. if your using a regular blender, please blend the soup in portions.. DO NOT stick the whole thing in and press go, its VERY hot and will splash EVERYWHERE. Do it in thirds.  There you have it! Garnish with some shaved parm and a sprig of thyme and enjoy with a dinner roll !

Blog is Born!

My first blog entry! How exciting, i never actually thought that i would ever create a blog.. Didnt really know what i would write about. But for the past little while i have been creating, exploring and learning new recipes and love sharing them with friends. So thanks to their persuasive suggestions, I've made a blog to get my recipes and other little interests out there to share!

Its January, a time of new beginings.. where dreams and goals are sparked and fueled by our renewed spirits. Years end is neither an end nor begining but a going on, with all the wisdom that experience and instill in us.

I am so excited to travel this May. I am going back to the Isle of Man, England where i was born, to visit my family and spend a week catching up. I havent seen my Mum in about three years!! So that should be fun, i'll have to make sure to visit all the local bakeries and bring back some inspirtation for some English recipes
When i come back from The Isle of Man,  I will be going on a ROADTRIP with Kirk (my everlasting love of my life) and our friend Stephan. We are going to spend three weeks exploring the east side of Canada. Im excited to go through Montreal, Nova Scotia and Prince Edward Island. Again, i will make sure to try all the special little dishes that side of Canada has to offer!! (POUTINE!) haha.

Anyway i'll add one of my favourite co0kie recipes now, Martha Stewarts Chewy Molasess Co0kies. I find these yummy co0kies to be very moist and they have always turned out perfectly for me. These are great for anyone with a cocoa allergy and are a delicious treat especially around the holidays.
